My family ate a ton of fish growing up, and salmon was on a weekly rotation for us. It was the one fish I looked forward to most! Something about the flakey and buttery salmon that melts in your mouth. Ah! I’m salivating writing this. So.. when the salmon rice bowl recipe by Emily Mariko became viral, I had to make it. This salmon recipe is topped off with soy sauce, kewpie mayonnaise, and siracha. What more can you ask for?!

Ingredients
- 1 salmon filet
- 1 sesame citrus rice cauliflower
- 1/2 avocado, sliced
- drizzle of low sodium soy sauce
- drizzle of kewpie mayo
- drizzle of sriracha sauce
- sesame seeds, for garnish
- 1 packet roasted seaweed sheets
Instructions

Add oil to a medium skillet over medium-high heat. Once the oil is ready, add the salmon to the skillet. Season with pepper, salt and any other desired seasonings. Cook for 2 minutes, then flip & cook 90 seconds – 2 minutes longer, or until your desired doneness is reached.
- Cook cauliflower for 7-8 minutes or until thoroughly heated through.

Flake salmon on a plate.

Add cooked cauliflower rice to a bowl. Then, add flaked salmon on top.

Top with soy sauce, mayo, and sriracha.

Mix well until combined. Should resemble a tuna salad-like texture.

Top with sliced avocado.

Enjoy either by laying individual pieces of seaweed on top and pinching with chopsticks or fill each seaweed pieces with about 1 tbsp of the mixture, a slice of avocado and kimchi!
