The Most Amazing Green Veggie Sandwich You’ll Ever Make! (Vegan)

Description
This vegan cucumber sandwich is a pretty, high-protein and easy to make lunch with cream cheese and avocado.
Ingredients
- 2 slices bread (any works!)
- 2 tbsp vegan cream cheese (I love this one!)
- 3 cucumbers
- 2 tbsp vegan pesto
- half of an avocado
- 1/3 cup sprouts
Instructions
Prepare your cucumbers
- Using a mandolin, make thin cucumber strips lengthwise. Set aside and pat excess moisture away if needed.
Assemble your sandwich
- Spread a generous amount of vegan cheese on a slice of toast. Layer cucumber slices diagonally across the toast, on top of the cream cheese.
- Spread pesto on the other bread, stack sliced avocado, and alfafa sprouts on the other slice of bread and top off with your cucumber layered piece of toast. Season with some salt and pepper if desired and enjoy!
